Three weeks out.

I have not posted in awhile, as I forgot.  So I figured since we got internet finally, I would post.  Nyla and I are 3 weeks out from our wedding on August 24th, and I am so excited!  I love to cook, and have been loving all the wedding gifts we got.  I got to thinking and I felt that I had some recipes to share, like everyone else.

So here goes:

Couscous salad?  Couscous scramble?  I don't know what to call it, but it's delicious.

How about I find at name at the end.

Ingredients:

Couscous
Chicken
Hummus
Vegetables (Bell Peppers, Red Peppers, Avocado, Black Olives)

Boil water for couscous, 1 cup of water for 1 cups of couscous.
Bake, or grill chicken and cut into pieces.
Pour in couscous and stir until water is absorbed.  Take off heat and stir every few moments to make sure that couscous does not stick together.  Keep covered when not stirring.
Cut up vegetables.
Put couscous into a bowl and mix in vegetables, chicken and hummus.
Enjoy.

You can use any vegetables you would like.  This is an incredibly easy and deliciously healthy meal.  I would say the hardest part is spreading the hummus around in the couscous, as it clumps easily.

This is an easy meal to make large quantities of and takes less than twenty minutes with chicken cook time.
